I have tested every diamond on the market and they all wore out instantly. I got very frustrated until someone enlightened me on the subject, here is what happens. The diamonds sink into the steel, the steel surrounds the diamonds, the bond can't hold them so they get pulled off the plate. If you use a diamond on carbide or ceramic, the material is so hard that the diamonds can not sink in so they ride along on the points undisturbed. We stock diamonds for ceramic knives but I know a lot of customers use them on steel, however they can't say anything to me when they wear out faster than a stone. That is also why I only stock a fine and super fine diamonds, the coarser the diamond the faster it wears out, if you use it on steel. We get 30 to 40 knives out of a coarse stone but you don't use them very often so they last a long time. The last diamond I tested was a DNT Industrial Super Coarse for $75.. I only got 10 knives out of and I had to push it to get that many. The 220 Med. will do 150 to 200, the 320 fine 200 to 300 and no has ever gotten a count on a 600 or 1000 because the last so long. The other problem with using diamonds on steel is the tear the metal rather then cutting smooth like a stone so you get a lot of burr and loose more metal off of the knife.
